The name says it all! This loaf is a nutrient-packed seeded
bread, that makes you feel fabulous inside and out. The fibre
content is stunning, not to mention all your protein, essential
fatty acid needs, and vitamin stores will be jumping for joy. If
you have never tried this loaf…..now is your time X
INGREDIENTS
1 cup sunflower seeds
1/2 cup flax seeds
1/2 cup hazelnuts or almonds
1 1/2 cups quinoa flakes
1 Tbsp chai seeds
4 Tbsp psyllium husks
1 tsp sea salt
3 Tbsp melted coconut oil or ghee
1 1/2 cups water
METHOD
In a silicon or lined loaf pan, combine all dry ingredients.
Whisk all wet ingredients together
Add wet ingredients to dry ingredients and mix well until combined. If dough becomes thick, add one to two tsp water until it’s manageable.
Smooth with the back of a spoon and let sit out on bench for at least 2hrs, or overnight
Preheat oven to 175C
Place the tin on an oven rack in the middle of the oven and bake for 20mins. Then remove the bread from the tin and place it upside down directly on the rack for another 30-40mins
Bread is cooked through when brown and sounds hollow when tapped
Cool completely before slicing
Store in an airtight container for up to 5-6 days. Freezes well, also!
