Healthy Sweet Potato Brownie

You just can't beat a brownie. Here's how to make a simple, soft and delicious one, without gluten, dairy or refined sugars. With this luscious sweet treat, you'll be getting the antioxidant benefits of cacao and raspberries, the protein and brain enhancers from the eggs and a great hit of fibre from the sweet potato. How can you say no to that?!


Healthy Sweet Potato Brownie

INGREDIENTS


  • 1 medium sweet potato (3/4 cup)

  • 2 organic free-range eggs

  • 1/2 cup melted coconut oil

  • 1/3 cup rice malt syrup

  • 2 tsp vanilla extract

  • 1/2 cup cacao powder

  • 1 tsp gluten-free baking powder

  • 1 tsp baking soda

  • 3 tbsp gluten-free flour

  • 9 raspberries

  • 2 squares of dairy-free chocolate (sugar-free)


METHOD


  1. Preheat the over to 180C, fan setting

  2. Grate the sweet potato and set aside

  3. In a large bowl, whisk together the remainder of the ingredients, then fold in the sweet potato

  4. Pour into a 20" pan and place raspberries and chocolate pieces on top

  5. Bake for 30 minutes, rest for 10 minutes
